Cinnamon trees are native to Sri Lanka but, as a result of the demand for cinnamon as a seasoning, trees are now cultivated commercially throughout parts of Asia. Cinnamon’s use as a flavoring for cooking has been known for thousands of years and references can be found in the most ancient writings. It was so difficult to obtain that it was truly a delicacy “fit for a king” as the average person could not afford its high cost. The spice cinnamon is obtained from the inner bark of the tree which is removed, dried, and ground to powder.
