Baked Zucchini Sticks

Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs (you can use panko for extra crunch)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 large eggs
  • Cooking spray or olive oil for greasing

Directions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

Wash the zucchinis and cut them into sticks, approximately 4 inches long and about half an inch wide.

In one bowl, beat the eggs until well combined. In another bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

Dip each zucchini stick into the egg mixture first, allowing any excess to drip off before rolling it in the breadcrumb mixture until fully coated. Place the coated zucchini sticks on the prepared baking sheet in a single layer without overlapping.

Bake in the preheated oven for about 15-20 minutes or until they are golden brown and crispy. For an extra crunch, you can flip them halfway through baking.

Once done, remove from the oven and let cool slightly before serving. Enjoy these flavorful baked zucchini sticks with your favorite dipping sauce!
