- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese (optional)
- 2 large eggs
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- Olive oil for frying
Directions
Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to ensure your fritters are not soggy.
Mix Ingredients in a large mixing bowl. Combine the drained zucchini with salt and let it sit for about 10 minutes. Afterward, add the flour, Parmesan cheese (if using), eggs, black pepper, and garlic powder. Mix well until all ingredients are combined into a batter.
Heat oil in a large skillet over medium heat, add enough olive oil to cover the bottom of the pan. Allow it to heat until simmering but not smoking.
Form the fritters using a spoon or your hands. Scoop out portions of the batter and form them into small patties about 1/2 inch thick.
Carefully place the fritters in the hot oil to fry them without overcrowding the pan. Fry them for about 3–4 minutes on each side or until they turn golden brown and crispy.
Drain the excess oil. Once cooked, transfer the fritters onto paper towels to absorb any excess oil before serving. Serve Warm. Enjoy your zucchini fritters warm with your favorite dipping sauce or simply topped with sour cream or yogurt!
