Baked Acorn Squash with Brown Sugar and Pecans

Acorn squash will be your new favorite side dish after you try this! Slightly reminiscent of a sweet potato casserole, you will definitely want seconds!

Servings: 2

Ingredients

1 acorn squash

2 teaspoons brown sugar (or honey)

2 teaspoons butter

1 teaspoon salt

2 tablespoons chopped pecans

Directions

Cut squash in half and scrape out the seeds. Put brown sugar, butter, salt and pecans in the hollow left by the seeds. Place in a covered baking dish. Pour 1/4-inch water in bottom of dish. Cover and bake at 400° F for 1 hour. Remove the cover during the last half hour of baking.

Brown sugar and pecans add extra flavor and sweetness to acorn squash.
