Caprese Salad

Servings: 3

Ingredients

3 large tomatoes
8 ounces mozzarella
1/4 cup extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup fresh basil, minced

Directions

Slice tomatoes and cheese. Arrange the cheese slices on a large platter. Top each with a tomato slice.
Combine oil, salt and pepper and mix well. Pour over the tomatoes. Sprinkle basil over the tomatoes and serve.
Variations: Add 1/4 cup balsamic vinegar for zestier flavor. Provolone cheese may be substituted for mozzarella.
