Chocolate Mint Frosting

Ingredients

5 tablespoons light cream

1/4 cup fresh mint leaves, chopped

3 cup confectioner’s sugar

1 teaspoon vanilla

1/2 cup butter, softened

1/2 cup cocoa

Directions

Combine cream and mint in a small saucepan. Heat to near boiling. Remove from heat and let sit until cool. Strain, pressing all the cream out of the leaves. Discard leaves. In a small mixer bowl add sugar, vanilla, butter, cocoa and cream. Beat until the frosting is creamy and of spreading consistency. Garnish with fresh mint.
