Cucumber Salad

Not too sure what to do with all of your extra cucumbers? This salad is a perfect way to utilize them as well as a cool treat on a hot summer’s day.

Servings: 4-6

Ingredients

1 small onion diced

3 thinly sliced cucumbers (try a cheese knife)

1/3 cup white sugar

1/2 cup white vinegar

1 tablespoon dried dill

Directions

In a small sauce pan combine sugar, vinegar, and a few tablespoons of water. Bring to a boil and pour over the cucumber and onion mixture. Stir in dill, cover and refrigerate for an hour.
