Easy 1-Pot Chili

Ingredients

1 1/2 pounds ground beef
1 large onion, chopped
1-2 serrano chili peppers, stems and seeds removed, minced
1 can tomato juice
1 large can diced tomatoes
3 cans dark red kidney beans
chili powder
salt and pepper

Directions

Brown ground beef with salt and pepper and chopped onion; drain. Add peppers, tomato juice, tomatoes and beans, including liquid. Bring to simmer, then add chili powder until it turns a rich, reddish brown color. Simmer until ready to serve. Serve with sour cream, shredded cheese, and green onions for garnish. Add a side of tortilla chips, bread, or crackers for a complete meal.
