Fresh Salsa Mexicana (Pico de Gallo)

Enjoy this refreshing, easy-to make condiment on tortilla chips, tacos, frittatas, burritos, quesadillas, potatoes and fajitas.

Servings: 4-6

Ingredients

2 plum-type tomatoes, diced
1-3 jalapeno peppers, chopped finely
1/2 c onion, chopped finely
2-4 tablespoons cilantro, chopped
1 tablespoon lime juice
Salt, to taste

Directions

Mix all the ingredients in a bowl and let stand for 30 minutes before serving. This salsa may also be stored in the fridge for up to a day.
