Spicy Lime Marinade

1 cup lime juice
1/2 cup olive oil
2 tablespoons yellow onion, diced
2 tablespoons cilantro, chopped
1 teaspoon garlic, chopped
1 tablespoon oregano, chopped
2 teaspoons salt
2 teaspoons ground black pepper
1 teaspoon red pepper flakes


Combine all ingredients and blend thoroughly. Marinate poultry, seafood or vegetables for 30 minutes to 2 hours.
Marinated shrimp kabobs on a plate

While you’re waiting for your ingredients to marinate why not enjoy an agua fresca; the perfect fruity, refreshment on a warm summer day.
