Triple Pepper Cheese Dip

2 teaspoons vegetable oil

2 cloves garlic, finely minced

2 medium onions, finely chopped

2 green bell peppers, chopped

2 banana peppers, chopped

3 tomatoes, coarsely chopped

1 can pimento, finely chopped

2 pounds Velveeta cheese, cubed


Heat the oil in a pan and sauté the minced garlic, push aside. Add onions and cook until soft. Add the chopped green bell pepper and banana peppers. When banana peppers start to soften, add tomatoes. Cook until soft. Add pimentos, garlic, oil and Velveeta. Cook over very low heat until cheese is melted, stirring frequently. Serve warm with chips, crackers or tortilla chips.
